Smoky Smoked Sausage and Potato Bake

1 lb (450g) smoked sausage, sliced into thick coins

2 lbs (900g) potatoes, cut into 1-inch chunks (Yukon Gold or red)

1 medium red onion, sliced

1 bell pepper, any color, sliced (optional)

3 tbsp olive oil

1 tsp smoked paprika

1 tsp garlic powder

Salt and black pepper, to taste

Fresh parsley or thyme, chopped (for garnish)

½–1 cup shredded cheese (optional, cheddar or mozzarella)
